Slow Cooker Chili
The cold weather is getting to me. I look forward to the days of the week when the temperature reaches the upper-30s-- the "warm" days as I call them. And even when the "warm" days come, its never really that warm out.
This chili, from Sweet Paul, is the perfect remedy for the winter chill. It has a subtle spiciness from the addition of red pepper flakes and a hint of sweetness from the honey. I adjusted the recipe to fit the taste of those I was feeding and to what I had on hand-- nixed the Sriracha and soy sauces, passed on the coffee, used kidney beans in lieu of the white beans and red pepper instead of celery.
Top the chili with your favorites. Mine include shredded cheddar cheese, sour cream, avocado, a ton of hot sauce and squeeze of lime. I served corn muffins on the side to round out a hearty, winter meal.
