Cara Cara Orange Tart
Happy happy Friday! Because of the "snow storm" and subsequent snow day on Tuesday, this week has felt so short. I am looking forward to a relaxing weekend with no big plans on tap other than eating this bright, citrus tart.I have a surplus of citrus fruits sitting on my counter right now. I've been making my way through the clementines, having one or two a day, and have a grand plan for the blood oranges involving tequila. My two cara cara oranges, however, had been looking a little lonely.
I actually have never had a cara cara orange before this and was unsure of what to expect. A little research and I knew I wanted to make a dessert with them. Cara cara oranges have a sweet taste with a bit of tart and a beautiful pinkish flesh. I choose to make a cara cara curd with a shortbread crust, following two different recipes from The Kitchn.
The fresh cara cara curd pairs perfectly with the crumbly shortbread crust. And I can't help but love the bright color the tart adds to a grey winter day.
