One-Pan Sausage and Potatoes
Lazy. That's what I've been as of late. I feel like the holidays really don't stop until mid-February and since then I've been enjoying slow, easy going weekends. Ordering pizza from our favorite spot (Layla's <3) and heating the leftovers up all weekend. Long walks with the pup, followed by afternoon beers. Overalls on repeat.
One-pan (well, almost) meals are all I need/can handle right now. Boiled potatoes are smashed and smothered with pesto, then cooked until crisp. Toss some sausages on the pan, et voila, 30 minutes 'til dinner. I followed this recipe from The Kitchn--swapping out out the garlic oil for arugula pesto and using Italian chicken sausage.
Okay, off to enjoy Community (what year is it?) and my couch.
