Upside Down Cranberry Cake
Cranberries are an oft forgotten ingredient. Relegated to the Thanksgiving table as a jelly and then, purely used as decoration; strung up with popcorn around the christmas tree or tossed in a sangria as a garnish.
But when I saw these beauties at the farmers' market on Saturday, I knew they had a higher calling.
I followed this recipe by David Lebovitz and its really all you need. The tart cranberries--coated in a sticky, sweet caramel-- nestle atop a buttery yellow cake. Its the perfect balance but I wouldn't shy away from adding a big dollop of whipped cream or a scoop of vanilla ice cream if you have either on hand.
This would be a great addition to any holiday gathering. For me, it was the perfect addition to my Sunday night.
