Green Avocado Sauce

A few weeks ago we had friends over to grill and they brought delicious chicken drumsticks in a basil marinade. The conversation turned to what we had been making for marinades and sauces lately. Our friends mentioned they had been adding avocado to their marinades, which got the wheels spinning in my head. 

This Green-Avocado sauce is a simple, all-purpose sauce for whatever you need. In-season radish greens adds spiciness. You could also use arugula, which will impart the same spice or spinach, if you would like a more mild flavor.  Avocado makes the sauce creamy, perfectly balancing the bite from the radish greens. 

We enjoyed this sauce with chickpea pasta. It would work equally as well as a marinade for your favorite protein. I was especially delighted to use radish slices to scrape the food processor down, leading me to believe this would also work great as a dip with veggies. 

Green Avocado Sauce

Ingredients

  • 1 bunch of radishes, tops removed and washed
  • 3 cloves of garlic
  • 1/4 cup olive oil
  • 1 avocado
  • Water, as needed ( I added 1/4 cup)
  • Salt and pepper

1. In a food processor, add radish tops and garlic. Pulse until thick paste is formed. 

2. Continue pureeing mixture while slowly drizzling in olive oil.

3. Add the avocado to the greens mixture and puree until combined. 

4. For a thinner consistency, add water a tablespoon at a time.

5. Season to taste and enjoy!.
