Zucchini Quick Bread

We are fully into Summer and I've been making weekly trips to the farmers' market to scoop up all the seasonal produce. My love of the farmers' market has no bounds-- it feels good to support my local farmers while also getting the freshest food possible. For me, Summer fruit is just to precious to bake with. For one, its expensive. But also, the flavors are just too good to be masked in a carby base. Unless I buy too much and have fruit thats going to go to waste, I prefer to let it shine by eating it as is or on top of yogurt, granola, and salads.

Summer veggies, however, are made for baking. I love using zucchini which adds moisture and imparts a subtle bitter, earthy flavor. This quick bread is easy to make, coming together in under an hour. And, while I'd like to say we will enjoy it all week, I don't think it will last more than a few days around here.

Zucchini Quick Bread

Adapted from Sally's Baking Addiction's Award-Winning Zucchini Bread

Ingredients 

  • 2 flax eggs (2 tablespoons flax meal+5 tablespoons water)
  • 1/2 cup olive oil
  • 1/2 cup coconut sugat
  • 1 medium zucchini, shredded
  • 2 teaspoons vanilla extract
  • 1 1/2 cups gluten free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg

1. Pre-heat an oven to 350 degrees. Grease and line a 9x5 loaf pan.

2. In a medium bowl, make your flax eggs by combining the flax meal with water. Let sit for a few minutes.

3. Into the bowl add the oil, sugar, zucchini and vanilla extract. Mix until combined.

4. Next add in the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix until the everything is just incorporated.

5. Pour zucchini batter into prepared loaf pan.

6. Bake the quick bread for 30-35 minutes. Bread will be golden brown and a tooth pick inserted into the middle will come out clean when finished. 

7. Let cool in the pan for about ten minutes before removing from the pan and cooling on a wire rack.
